Fermented in closed tanks with gentle extraction by pumping over and then pressed and racked into first and second year French oak barrels for 9 months to add complexity and structure to the soft natural tannins. 10 % American Oak.
Delicious now, with hints of nutmeg, plumfruit and pepper , spiciness on the finish.
Serve with pot roasts, stews, full flavoured homely meals.
